Peperone Cruscato (synonym of Crusco) is a product
typical Lucanian, it is the result of the cultivation of a well-defined variety
of sweet pepper, small in size, with an elongated shape
and of an intense red colour, particularly suitable for drying
tradition by the air and the sun.
The name of this product comes from its “crunchiness”
unmistakable that these peppers take on when they are
fried in extra virgin olive oil after the drying phase.
Just a few days after the harvest, we begin with the
production of Serte, or the classic long braids of peppers
usually a couple of meters and made with needle and thread.
The berries are then hung to dry, a process that lasts until
until the pepper is completely dehydrated.
Only after that can it be processed for frying (cruscato or crusco)
Ingredients: dried peppers 90%, Extra Virgin Olive Oil, salt.
May contain traces of nuts.
Suggestions for use: It can be used as a side dish, aperitif, with vegetables or to accompany wine or beer.
