Peperone Cruscato (synonym of Crusco) is a product
typical Lucanian, it is the result of the cultivation of a well-defined variety
of sweet pepper, small in size, with an elongated shape
and of an intense red colour, particularly suitable for drying
tradition by the air and the sun.
The name of this product comes from its “crunchiness”
unmistakable that these peppers take on when they are
fried in extra virgin olive oil after the drying phase.
Just a few days after the harvest, we begin with the
production of Serte, or the classic long braids of peppers
usually a couple of meters and made with needle and thread.
The berries are then hung to dry, a process that lasts until
until the pepper is completely dehydrated.
Only after that can it be processed for frying (cruscato or crusco)
Ingredients: dried peppers 90%, Extra Virgin Olive Oil, salt.
May contain traces of nuts.
Suggestions for use: It can be used as a side dish, aperitif, with vegetables or to accompany wine or beer.

Usage Tips:
Clean the dried peppers with a cloth and remove the stalk and seeds; in a pan heat plenty of olive oil, when the oil is very hot dip the peppers in it for a few seconds, being careful to drain them as soon as they swell, let them cool and then salt them. Crispy ancient taste to serve as an appetizer or to give flavor to your first courses, enhances meat and fish dishes, makes soups, broths and salads special.

Prodotto simbolo di Oppido Lucano. di tradizione secolare realizzato da carni selezionate accuratamente e private manualmente delle parti nervose e del grasso in eccesso. Le carni sono prima lavorate a punta di coltello garantendo un perfetto equilibrio tra parti magre e grasse e poi impastate con aggiunta di sale, polvere di peperone piccante e finocchietto selvatico. Il tutto viene successivamente insaccato con budello naturale di suino formando almeno 3 anelli dal diametro di 4 cm l'uno che vanno a formare la tradizionale “CATENA”. Dopo circa 30 giorni di stagionatura al tepore naturale e ad una temperatura fresca e priva di correnti umide avremo come risultato finale la salsiccia a catena di Oppido Lucano.Il prodotto viene lavorato su richiesta anche come Salsiccia fresca o piccante.

Is homogenized milk bad for your health?
During homogenization, milk is subjected to high pressure in order to standardize and disperse the fat globules in the milk. There are currently only a handful of studies on the potential health effects of homogenized milk. Based on existing studies, there is no correlation between homogenization and the onset of illnesses such as diabetes, cardiovascular disease or allergies. From a scientific point of view, there is little reason to believe that altering the fat particles in the milk could be detrimental to the health of the general population.
Are organic products healthier than conventional products?
No one is really sure whether or not organic products are healthier for us than conventional products. The Research Institute of Organic Agriculture's dossier on Sustainability and quality of organic food(2021) shows that organic food products usually contain better quality ingredients than conventional products. Investigations suggest that organic products contain a higher level of secondary metabolites or unsaturated fatty acids. However, organic products are no higher in vitamins and minerals. This is because these depend primarily on the cultivated variety, time of harvesting and environmental conditions.
Organic products also have less heavy metal contamination and fewer pesticide residues as well as less nitrate. This being said, conventionally grown produce is also subject to strict legal maximum levels for these substances.
Very gentle processing methods must also be used for Bud products, whereby the products should be as natural and undergo as little processing as possible. The use of additives in organic products is also strictly limited.
Of course, organic products are important for the health of our planet. By consuming organic products, we can make a significant contribution to sustainability and humane animal husbandry.
